black bean corn salsa.

I really love salsa. Like really really. And this is a fun party dip to bring to your next potluck or family gathering. It's larger than my other salsa recipes, but can be cut in half for a smaller family size. 

 

Ingredients:

15 oz can of cooked black beans

15 oz can of cooked corn

1 yellow or orange bell pepper, chopped

2/3 cup red onion, chopped

1 cup Roma tomatoes, chopped

1/2 jalapeno, minced and deseeded

1/4 cup cilantro, chopped

1 lime

1-2 teaspoons fajita seasoning 

 

1. Drain and rinse beans and corn.

2. Add all ingredients into a bowl and stir.

3. Top off fajitas, fish tacos, or enjoy with chips!
