green bean galette.

So I made some recipes for the November issue of Feast Magazine. It's 7 creative takes on Thanksgiving Leftovers. Check out my recipes page for more ideas!

Green beans are often the most overlooked dish during Thanksgiving dinner. If you make them with a lot of garlic or bacon, this galette should work well with your leftovers. I make my green beans with mushrooms (as pictured here), but other earthy or savory ingredients will work in the galette.

Serves 6

Ingredients

  • Fresh pie dough

  • 2 cups cooked green beans

  • 1 Tbsp olive oil

  • 1 tsp minced garlic

  • 1 tsp fresh thyme

  • ½ tsp salt

  • ½ tsp freshly ground black pepper

  1. Preheat oven to 375°F. Prepare a large jelly-roll baking pan with parchment paper lightly dusted with flour.

  2. On a floured work surface, roll out dough into a round with about ¹⁄₈-inch thickness. Lay dough onto prepared baking pan. Place green beans on top of dough, about 1 to 2 inches away from edges. Pinch and fold edges up and around beans and brush dough with oil.

  3. Sprinkle garlic, thyme and salt and pepper over top of green beans.

  4. Place in the oven and bake for 35 to 40 minutes, until crust is golden brown. Remove from oven and allow to cool. Serve.
