Summer here in St. Louis...I feel like I'm always talking about how stinking hot it is. BUT IT IS SO TRUE. So I came up with this refreshing cool drink to keep it cool this summer. Here's another tasty one I came up with for the Lucky's Market brunch post. Others include: raspberry cinnamon buns, heirloom tomato veggie tart, and peach mozzarella crostini. Let me know how you're keeping cool right now! Mostly so I can steal your tricks.
¼ cup of rosemary simple syrup
¼ cup sugar
½ cup water
2 rosemary sprigs
½ small watermelon, cubed and frozen
1 cup lemonade (unsweetened)
Create a simple syrup first. Pour sugar into a small sauce pan, cover with ½ cup of water. Bring to a simmer and stir until sugar is dissolved. Add sprigs of rosemary and turn off heat. Cover and let sit for 10 minutes. Strain and place into jar.
Add lemonade, 1 cup of watermelon, and 1 teaspoon of rosemary simple syrup. Blend and taste. Add more watermelon if needed to be thicker or rosemary simple syrup to be sweeter.
Pour into two glasses, stick a sprig of rosemary into the drink, and enjoy!
