bunny chow.

It's almost Easter (and Passover) which means that we've all got to start thinking about what special treats we're going to make this year. Personally my favorite memories as a kiddo were making deviled eggs with my aunt and mom after all the real eggs were found in the egg hunt. I actually wasn't a huge fan of the plastic eggs filled with candies, the ones filled with money however...were never a bother. Actually if I got some of those now at 26, I still wouldn't mind. And of course my Easter basket. They usually had some pretty great hair clips and socks.

 

Well this year for Easter I've decided to team up with Bissinger's, a local favorite, to bring you some sweet treats. I got to taste test some of their delicious Easter basket stuffer items. Below you can see them all, like the molasses caramel lollies, milk and dark chocolate bunny ears, dark chocolate eggs, and jelly beans! The decor and packaging are bright and beautiful as usual with Bissinger's. And even more exciting, they've decided to give one of my followers a 2 lb centerpiece bunny! Now let's chat about this bunny chow! It's a Chex Mix base with a brown sugar, butter, chocolate (bunny ears), and powdered sugar coating. I mixed in my favorite pastel sprinkles and some of the unwrapped chocolate eggs. This bunny chow is more like a chocolate chip cookie than puppy chow! Read below for the recipe. I hope you try it out and love it as much as I do.

 

 

 

 Ingredients:

  • 1 box Chex Mix (about 9 cups)

  • ½ cup butter

  • ½ cup brown sugar

  • 8oz of dark chocolate (8 Bissinger’s bunny ears or 1 cup chocolate chips)

  • 1½ cups of powdered sugar

  • Sprinkles

  • Small chocolate eggs

  1. In a small pan melt your butter, brown sugar and chocolate. Stir pretty consistently to not burn.

  2. Pour Chex Mix into a large bowl. Once chocolate mixture has melted pour it on top of the Chex Mix and stir with a large spoon.

  3. Spoon half the mixture into a large gallon ziplock bag and add half of the powdered sugar, sprinkles and chocolate eggs. Shake until coated. You can always add more powdered sugar than called for to get the coating even whiter.

  4. Pour mixture out onto a parchment sheet lined baking sheet to let cool and dry. Repeat step 3 with the remaining Chex Mix.

  5. Pour into a bowl for serving and enjoy!
