Peaches! It is summer time and that means stone fruits! Everyone should be super stoked for this as well because what’s better than a juicy peach on a blistering day? You’re right. Not much. But being able to pick your own peaches, well that’s pretty stinking awesome as well.
This last week I went to Eckert’s Family Farms in Belleville, IL (only about 30 mins from the CWE) to pick my own fruit. Although it was far too hot outside for any reasonable human being, I really wanted to pick my own peaches and make some summer treats! So I headed down to the farm with the BF and our friends to PYO (pick-your-own). We honestly couldn’t make it through to the blackberries because we were so hot from picking peaches. Whoever decided we should go at 2pm was pretty dumb (it was me). But we got a whole big basket of the juiciest peaches for only $.99/lb., which is insane if you ask me. But I guess that’s what you get for doing some labor for your food!

And as I often have trouble taking photos of myself (who else needs a selfie stick for their DSLR?) I figured what better way of photographing this gem than by taking it out on a trip to the farm and having my wonderful friend Hannah model the watch for me... And then asking her to climb into the trees with me to get some fun pictures of picking peaches. Lots of close ups so you don't have to see how wonderfully sweaty we all were.

So, after a glorious, sweltering day of peach picking with friends I figured my best bet for eating up all these peaches was to bake them a few different ways. Number 1 way: mini peach galettes! They may not be perfect but they are ridiculously tasty.

½ of a lemon
¼ cup granulated sugar
2 tablespoons cinnamon
2 teaspoons nutmeg
Pinch of salt
¼ cup honey
2 tablespoons maple syrup
1 pie dough (from the store or homemade)
1 beaten egg (egg wash) or ¼ cup cream
Preheat oven to 400°F.
Slice peaches into ½” pieces (skin on). Place the slices in a large bowl and mix with the juice of the lemon, sugar, cinnamon, nutmeg, salt, honey and maple syrup. Place in the refrigerator while you prepare your dough.
Take the pre-made dough and roll it flat (about ¼- ½” thick) onto a floured surface. Using a cereal bowl as a cutter, cut out a small/medium circle out of the dough. Cut out as many circles as you can. Mine cut out about 4 circles.
Lay the circles onto a baking sheet covered in parchment paper. Lay out your peaches on top of the dough about 1-2” away from the edge. Fold up the edges and crimp to hold them together. Brushing an egg wash on the dough where it is crimped will help keep the dough together. Or you can use a cream wash for extra browning. Sprinkle the top with coarse sugar.
Place in the oven for 25-30 minutes or until golden brown.
Remove and allow to cool. Serve with ice cream!
