My all-time favorite fruit is watermelon. Everyone that knows me, knows my love for watermelon. When I was a little girl my aunt used to make sure to have it in her home before I came over just to make me happy. I like it plain, spiced, tossed in salads, made into sorbet…really I just love anything that has watermelon.
One of my favorite things to do with watermelon is to squeeze limes over it and add a little mint. It’s a fun flavor combo and it’s so refreshing on a hot summer’s day. So, when I got my new popsicle mold I decided that this would be my first recipe with it. I can’t wait to try out more juice based and even creamy recipes, so stay tuned.
We ended up with a little extra of the mix, so I made a mocktail and the BF made himself a popsicle cocktail. If you’re feeling wild, you should definitely try it!

3 cups watermelon, cubed (¼ of a medium watermelon)
2 cups strawberries
1 spring fresh mint
Using a blender or processor, puree the watermelon and strawberries together.
Juice about ½ of the lime into your mixture. Mix and taste. Add more lime juice if preferred.
Remove leaves off the mint and add to blender. Pulse until mixed. Taste and make adjustments as necessary.
Pour the mixture into your mold, but not quite to the top. Slide in a few slices of strawberries into the sides using a toothpick. Add popsicle sticks and follow your mold’s instructions for freezing.
Remove from freezer and run warm water over the top to loosen popsicles from mold.
