apple and goat cheese salad.

This is my “knockoff” version of my favorite salad from Nordstrom Café! I love this simple and healthy salad on lazy nights when I really don’t want to do much work, but still want a yummy meal. This is another great one to package up and bring to work as well. It doesn’t welt very quickly and is a delicious pick me up in your day. Feel free to toss in red onions, some tomatoes or even a different protein (maybe chicken). If you try them out, be sure to post a pic to Instagram (or any social media) and tag #feedmewithamanda.


  • 1 package of turkey breasts

  • olive oil

  • salt and pepper

  • kale

  • spinach

  • goat cheese

  • Champagne vinaigrette

  • 2 granny smith apples

  1. Preheat your oven to 350° F.

  2. First you will prepare a baking sheet or casserole dish with olive oil and lay out your turkey. Cover the turkey in a little oil, salt and pepper. Pop that in the oven for 35 minutes. It may cook faster or slower, so keep an eye on it. The center should be cooked through.

  3. Prepare your salad next. Rinse your lettuces and place in a bowl.

  4. Rinse and chop up your apples. Place in the bowl with lettuce; add champagne vinaigrette and goat cheese. Mix until coated.

  5. Once your turkey is cooked, cut that into diced pieces and put in with the rest of the salad.

  6. Serve and enjoy!
